A trattoria does not stay open in Florence for over fifty years if the food is not up to the daily scrutiny of the locals who eat there. For three generations this family has been serving simple Tuscan fare at honest prices to the artisans and inhabitants of the Santo Spirito area. Even with its deserved fame it has not gained the pretensions of so many other trattorias in Florence.

At busy times you may have to wait and you may have to share a table, but you will be made welcome and the service while fast and efficient is friendly and informal. This is one of the best places to taste the thick vegetable and bread soup, ribollita or the delicate flavor of the most tender boiled beef, bollito di manzo perfectly matched with salsa verde (a puree of raw garlic and parsley). In summer you might try wafer thin roast beef with salad, but what ever you choose, save space for a homemade dessert! Wine as you would expect is simple, honest, Tuscan and by the carafe.
